I said that I’d show you what I put the caramel sauce on and this my friends is it! Ta-da!!I love apple pie and so does my husband. However for just the two of us an entire pie is a bit much. Plus I wanted something a little quicker. I didn’t want to make and roll out dough or wait for something to bake. This stove top recipe is quick and oh so delicious! You can easily throw this together for a week night dessert or even a special weekend snack! I made only one dessert as my hubby and I shared but this recipe can easily be doubled, tripled or quadrupled – you decide!
Just like with any apple pie you’ll want to use a more tart apple. I used Honeycrisp but Granny Smith would work as well, really, just use your favorite! Top it with some vanilla ice cream and the caramel sauce – it’s like an apple pie on a churro! All I’m saying is you have to try this! You’ll only be sorry if you don’t
Apple Pie Tostada
1/2 cup granulated sugar
1 tsp cinnamon
1 large apple chopped small
1 tbsp brown sugar
1 tbsp granulated sugar
1 tbsp butter
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tortilla (taco size)
oil, for frying tortilla
Walnuts or pecans chopped (optional)
Vanilla ice cream
Make cinnamon sugar:
Stir together 1/2 cup granulated sugar and 2 tsp cinnamon. Spread mixture in flat dish.
Place chopped apple in pan with butter and begin to saute. Add both sugars, cinnamon and nutmeg. Cook and stir for 10-12 minutes or until apples slightly soften. Stir in chopped nuts if using. Remove from heat.
Heat oil in pan. Add tortilla and fry till lightly browned on both sides. Remove tortilla from pan and immediately dip in cinnamon sugar mixture, flipping so both sides of tortilla are coated.
Place cinnamon coated tortilla on serving dish. Top with cooked apple mixture. Top with a scoop of vanilla ice cream. Drizzle caramel sauce over dessert. Top with whipped cream.
